1. Smooth texture
For a smooth texture, mix the ingredients with a hand mixer, which does not make the dough so aerated. Then, bake slowly at low temperature for approximately 180ºC.
2. Aerated mass
If you like an aerated dough, beat the dough in a blender and bake over high heat.
3. Vanilla Essence or Fresh Fava?
Did you know that you can exchange vanilla extract for fresh fava beans? If you prefer to make the switch, mix the milk with the bean and its seeds, let it boil and turn off. Then, let the mixture rest for approximately half an hour, strain and add.
4. Syrup
When making the syrup melt the sugar, turn off the heat as soon as it starts to turn yellow, because with the hot form the syrup continues to cook and may end up becoming bitter.
5. Water bath
Never put aside the water bath (inside the oven) because it guarantees a creamy texture to the pudding. To do this, fill the pan with ⅔ of water so that it does not dry out. But if it still dries, add water that is already hot and at the same temperature.
6. How to prevent the formation of a crust
Do you know that strange and hard crust that sometimes forms in the pudding? I have the solution! ; D You can avoid it by covering the pan with aluminum foil during cooking. Just make sure the paper is not touching the dough.
7. Unmold the pudding
When it comes time to unmold your pudding with a few exceptions, such as white pudding, unmold it after it is cold. Then, pass a blunt knife (so as not to lose the shape of the candy) around to loosen it. Then take the pan to one of the stove burners, for a few minutes until the syrup softens. Then, turn the pudding already positioned on the serving plate.
