Have you heard of “Brownie in a jar”? The idea is to fill a small glass jar with the dry ingredients needed to prepare a delicious brownie, perfect to present that special person with a delicate and beautiful souvenir. Banco de Alimentos, an NGO dedicated to reducing food waste in Brazil as much as possible, has much more than just ingredients. They convey the message of how important it is to enjoy our food in an integral way. At the Brownie in a jar from them, for example, instead of nuts come pumpkin seeds, rich in fiber, zinc and healthy fats. In addition, it is an ingredient that represents the objective of the entity.
ABOUT THE FOOD BANK
Founded in 1998 Based on the civilian and pioneering initiative of the economist Luciana C. Quintão, Banco de Alimentos is a civil association that works with the objective of minimize the effects of hunger and combat food waste. The central proposal is to allow a greater number of people to have access to basic and quality food – and in sufficient quantity for a healthy and balanced diet. The food distributed is surplus of commercialization, perfect for consumption. The distribution makes it possible to supplement daily food for people assisted by the 42 institutions registered in the project – more than 21,000 people, including children, youth, adults and the elderly.
From January 1999 to April 2015, the Food Bank collected 5,856,989.60 kilos of food – base for 54,479,220 meals, avoiding great waste. Currently, more than 13 million people go hungry in the country (FAO, 2014). Given that it becomes even more frightening when we consider that Brazil is the world’s fourth largest food producer (Akatu, 2003) and produces approximately 25.7% more than necessary to feed the entire population (FAO) .

Dani Noce prepared her Brownie in a jar and added a touch of Christmas with a topping of ganache and berries. To make ganache, you already know, right? Hot 70 grams fresh cream in a pan and arrange 150 grams of 70% cocoa chocolate on a processor. Pour the hot fresh cream over the chocolate, cover the processor and count 3 minutes for the mixture to melt a little.
Then process until you get a homogeneous cream and finally add 1 tablespoon of chilled butter and finely chopped. Process some more and serve this chocolaty cream over your brownie. Decorate with berries and a little chopped pistachio or the fruits of your choice. Isn’t it a beautiful dessert for Christmas?
