Cabernet Sauvignon served in Escondidinho # 01

For Escondidinho’s first dinner it was important to choose a wine that was versatile enough to match the variety of the menu developed by the chefs.
When it comes to harmonizing, I always like to observe what will be the element that will draw the most attention in a given menu. If they propose a wine just for the whole dinner, I usually give privilege to the main course, which in this case was the Ragú de Boeuf to the Red Wine. As the invited chef handed me the recipe, needing that his favorite red wine for this recipe is usually one from the Cabernet Sauvignon grape, so I didn’t even think twice and I started looking for a good Cabernet Sauvignon to complete everything (why complicate life? , it is not?)!
The Cabernet Sauvignon grape is a French grape, from the Bordeaux region, and appears in the vast majority of blends in that region (along with the Merlot, Cabernet Franc, Petit Verdot, Carmenère and Malbec grapes – whew!). In fact, the wines of that region will always be a blend, that is, a mixture of at least two of these grapes. Outside the Bordeaux region, in countries like Chile, Argentina and Australia, it will be more common to find wines that will be made using only one type of grape. And don’t worry! Wines called a single grape, also called “varietals”, are as good as blends! They’re just different styles!
wine Escondidinho1It was imperative for the success of the harmonization that the wine was not only good, but also had a friendly price. In this case, there are many options of wines with excellent cost / benefit ratio originating in South America (with lower import costs …). The great specialist in Cabernet Sauvignon in South America is Chile, with dozens of wineries and quality labels and one of my favorites is Viña Montes, producer of great icons in the world of wine such as the Montes Alpha line and the incredible Purple Angel .
So, I chose a wine from their classic line, Montes Cabernet Sauvignon, which year after year always shows a very consistent quality, besides being always perfect to go with red meats! This is a wine that has an intense ruby ​​color, with aromas of cinnamon, caramel, hints of mint and a very subtle woody. On the palate it appears full-bodied, but with round and elegant tannins, which makes it a very pleasant wine to accompany entrees and still ideal for Ragú with red wine!
wine Escondidinho2Finally, Viña Montes has a story that I particularly like: all its wines have an angel on their labels because one of the owners believed that, in addition to the dedication and love of their work, angels were responsible for beauty and success of the winery and the quality of its blends. So, to thank this “divine grace”, he decorated the property and the wines with works of art by stylized angels. Of course, the angels brought luck to the dinner, as it was an absolute success! Just compliments!
