How do you know if the oil is hot for frying?

The ideal temperature for frying is between 180 ° C to 190 ° C. If it is too hot, the food will fry very quickly, but it can be raw inside. The oil will burn at 205 ° C, so keep an eye on the flame, which must be constant and bluish (indications that the gas is not running out!). For those who do not have a thermometer, there are some tips to know when the time is right for frying.
First of all, use a good oil. This goes for both the type – canola, corn, sunflower – and the brand. Sometimes, saving only hurts. So that the process is not so harmful to health, the best thing to do is to prevent the food from becoming soaked in oil. This happens when it cools, therefore, smaller amounts in the pan.
The first tip is to put a piece of bread in the pan where the oil is. If, in 40 seconds the bread turns golden, pimba! This is the time to fry. If it browns a little less, it means that the oil is too hot; if it takes longer than the above time, the oil is not at the right temperature.
Another tip is to place a matchstick in the oil pan. As soon as it lights up (and this is a fun experience, it’s worth testing), tchanan! This is the moment. But you have to watch the match all the time, because everything happens very quickly: it lights up and goes out in a second or two.
There’s the tip of the wooden spoon, too. When placing it in the center of the pan with the hot oil, some bubbles will appear around it. When this happens, it is a sign that the oil is ready.
Of course, there are several types of food to be fried, from potatoes to fruits. In the case of the first ones, there are some secrets to make them look very dry and crunchy, like frying them while frozen. If not, you can dry the potatoes with paper towels.
