After so many Easter eggs, you’re probably looking for slightly lighter recipes for this week. But that’s not why you’re going to give up sweets in the next few days, is it? It was precisely with this in mind that I made this selection of functional, vegan and light recipes to enjoy without guilt 😉
SMOOTHIE CHOCOLATE VEGAN
It’s hard to give up chocolate, I know, but why not use it in a lighter way? This lactose-free, vegan smoothie takes cocoa powder, almond milk, bananas and blueberries! In addition to being healthy, I swear it looks delicious.
Frozen and processed mango. Is there an easier and healthier dessert than that? I don’t think so 😉
CHOCOLATE PIE WITH GLUTEN-FREE / LACTOSE RASPBERRIES
More chocolate, after all, it’s hard to let go! This very wet pie with raspberries has no gluten or lactose, but the flavor is intense and irresistible 😉
DRIED FRUIT TRUFFLES
I love sweets with dried fruits and these healthy truffles are great substitutes for that classic brigadeiro that we make on lazy days. The intense dark chocolate, the sweetness to the date and the delicious mix of apricots, figs and pistachios is mouthwatering!
HEALTHY COCONUT MILKSHAKE
Any day is better after a milkshake, right? And oddly enough, there are healthy versions of this incredible drink! The one with grated coconut, coconut milk, honey (or agave) and tofu will surprise you.
VEGAN CHOCOLATE MOUSSE
Mousse is always a nourishment in the soul, especially if it is chocolate. The version with homemade coconut milk, dates, cocoa powder and chia is healthy, but just as delicious!
INTEGRAL APPLE GALETTE GLUTEN FREE / LACTOSE
Of course, there would be no shortage of fruit on this list 😉 The galette with wholegrain dough and apple filling is simpler to make than you think!
PANACOTA VERRINE WITH DAMASK PUREE
Just talk about light dessert that I already remember the panacotas! The delicate flavor, the light texture and the ice cream that surrounds this sweet conquer me with each spoonful.
FUNCTIONAL VEGAN CANJICA
For me, there is no right time of year to indulge in hominy. The functional recipe is as tasty as the original 😉
SIGH CLOUD WITH STRAWBERRY JELLY
To finalize this very light selection, I couldn’t stop talking about sighs. Is there lighter candy than that? This low carb version served with a generous layer of strawberry jam is perfect for killing the sweet tooth at the end of the day, right?
I know you’re still going to get some pieces of that Easter egg left, but it’s always good to have healthier options ready at home so as not to overdo it 😉
