You need:

  • 80 grams of cottage cheese

  • ¼ small romaine lettuce

  • ¼ large bunch of mint

  • ¼ clove of garlic

  • 50 grams of cottage cheese

The preparation:

For the salad, boil 1/4 liter of water with 1/2 teaspoon of salt and 1 tbsp of oil. Stir in the couscous. Remove from heat and cover and let soak for about 5 minutes. Then loosen with a fork and season with the lime juice.

Clean, wash, core and finely dice the cucumber. Clean and wash the spring onions and cut into fine rings. Clean, wash and drain the lettuce. Halve and cut into fine strips. Wash the mint, shake dry and pluck the leaves off. Roughly chop 3/4 of the mint and finely chop the rest.
Now peel the garlic, roughly chop it and finely mash it with a fork. Mix the cottage cheese with the garlic, finely chopped mint and ½ tbsp oil.
Finally, mix the couscous with the cucumber, spring onions, lettuce strips and coarsely chopped mint. Then spread the cottage cheese loosely on the salad.
