Recipe African soup made from sweet potato and peanut with tofu

Ingredients for one serving (500 calories)

  • 1 teaspoon olive oil (extra virgin or extra virgin)

  • 1 clove of garlic

  • Onion (medium)

  • Teaspoon ginger (grated)

  • 175 ml vegetable stock

  • 175 g chopped tomatoes (without salt or sugar, canned)

  • 150 g sweet potato

  • 100 g smoked tofu

  • 1 tbsp peanut butter (no added sugar)

  • 1/2 Teaspoon cumin (dried)

  • 1/2 Teaspoon coriander (dried)

  • A pinch of salt

  • A pinch of black pepper

  • A pinch of cinnamon

  • A pinch of chilli flakes


  1. Peel the onion and garlic, then chop them up. Wash the sweet potato and cut it into cubes.

  2. Warm the olive oil in a saucepan over medium heat. Add the garlic, onions, and ginger, stirring regularly until the onions are soft (about 3 minutes).

  3. Add the vegetable stock, the chopped tomatoes, the sweet potato, the Add peanut butter and the spices (cumin, coriander, chilli, salt, pepper and cinnamon). Bring the liquid to a boil. Cover the pot and let the ingredients simmer for 12 minutes so that the potatoes are tender. Occasionally stir.

  4. Pour the soup into a bowl. If you want, you can do this beforehand pure.

  5. Cut the tofu into cubes and spread it over the soup
