“I can never resist when it comes to chocolate! I discovered the recipe a few weeks ago and made it figure-friendly. At my Christmas meeting, the thalers were a hit! “Reveals Ruth Moschner. You can easily bake them at home.

250g birch sugar
1 pinch of vanilla (see Kipferl)
250g almond flour
1 tbsp potato starch
1 teaspoon baking soda
160g chocolate (preferably 70-80 percent cocoa content)
2 organic eggs
1 egg yolk (use the remaining egg white for the macaroons)
1 pinch of salt
150g dried fruits (e.g. cranberries or apricots diced)

Preheat the oven to 175 degrees top and bottom heat. Chop the chocolate, melt it over the water bath and then let it cool down. Meanwhile separate the eggs. Mix the egg yolks with the sugar and vanilla with the electric whisk until the mixture is nice and light. Then pour in the chocolate and stir. Mix the almond flour with the baking soda and the potato starch and fold into the mixture together with the dried fruits. Finally, beat the egg white with a pinch of salt until stiff and fold in carefully.

Divide the dough into portions the size of a walnut and press them flat on the baking sheet lined with baking paper, so that a small round cookie is created. Make sure that the dried fruits are covered with batter, otherwise they will burn during baking.

The cookies are done after 12-15 minutes in the oven.
