Cooking, baking, frying – almost everyone uses cooking oil in one way or another on a daily basis. Whether an edible oil is healthy or not depends in particular on the type of fatty acid it contains. Unsaturated fatty acids are an important part of the human diet and are found in many edible oils.
The variety of edible oils – how do they differ?
There are many different edible oils. One of the most important differences is of course the taste, but the area of application is also an important criterion. Not every cooking oil is an all-rounder in the kitchen. Some are only suitable for frying, some for cooking and still others only for seasoning and dressings. The most important difference between the edible oils, however, is the type of fatty acids they contain, because these decide whether an edible oil is healthy or whether it should be consumed sparingly.
In addition to saturated fatty acids, palm oil and coconut oil, for example, are considered unhealthy and should only rarely be on the menu. If an edible oil is healthy, it contains monounsaturated fatty acids. A good example of a healthy cooking oil is, for example, the popular olive oil, which has many uses outside of the kitchen. Monounsaturated fatty acids are only topped by polyunsaturated fatty acids and therefore these are found in the healthiest types of cooking oil – rapeseed oil and linseed oil.
You can use oils particularly well for this
Oils can be roughly divided into refined oils and native oils. Refined oils are clarified and heated strongly to make them last longer. Most of these oils can be used very well for frying, baking and cooking through this treatment, but the vitamins and phytochemicals are also lost through the process.
Native oils, on the other hand, are cold-pressed and thus retain their vitamins and phytochemicals. However, they can go rancid more quickly and, with the exception of olive oil, are not suitable for frying.

Olive oil is supposed to be somehow healthy, they say. But why is that actually the case? What makes an oil a good oil? And which one is suitable for which dishes and preparations?
These 5 edible oils are particularly healthy
With the variety of edible oils, the following five representatives come into focus when it comes to health and popularity.
1. Walnut oil
Walnut oil is something special because it contains a very balanced ratio of monounsaturated and polyunsaturated fatty acids. In addition, vitamin B, vitamin E and magnesium make the edible oil very healthy. Thanks to its nutty taste, it is ideal for refining salads and other dishes.
2. Hemp oil
Hemp oil contains a particularly large number of polyunsaturated fatty acids and is therefore one of the healthiest edible oils around. Cold dishes can be perfectly refined with hemp oil, but hemp oil is not suitable for heating. However, the edible oil can also be used as a beauty product outside of the kitchen – for example for the care of flaky and dry skin.
3. Linseed oil
Just like hemp oil is too Linseed oil does not have a long shelf life and an opened bottle can oxidize quickly and should be used up promptly. The high proportion of polyunsaturated fatty acids and omega-3 fatty acids ensures that the oil has a very low smoke point. Therefore, linseed oil should only be used for cold dishes.
4. Rapeseed oil
One of the classics in the kitchen is rapeseed oil. Polyunsaturated fatty acids and omega-3 fatty acids make the local oil very healthy. However, you should be careful to use a cold-pressed rapeseed oil that still contains the vitamins. Cold-pressed, however, it should only be heated briefly. Refined rapeseed oil is better suited for frying, cooking and baking because the smoke point is higher.
5. Olive oil
Olive oil has become an indispensable part of the kitchen and cosmetics. Primarily, olive oil contains monounsaturated fatty acids and is therefore a little less healthy than hemp oil or linseed oil. In contrast to linseed oil and hemp oil, olive oil can also be heated and used for frying and cooking. In cosmetics, it is a good moisturizer for skin and hair.
