Crispy baked crostini with fresh homemade pesto – it not only sounds great, it also tastes fantastic. Together with the “World Avocado Organization (WAO)” we show you this delicious recipe. In just a few steps you can prepare the pesto yourself and the rest is very easy to do.
For the pesto
1 avocado, peeled and pitted
1 large handful of basil leaves
30 g walnuts
20 g grated parmesan cheese
1 clove of garlic
salt and pepper
150 g cherry tomatoes, halved
1 tbsp coriander leaves, washed
60 ml of olive oil
12 slices of baguette, toasted
For this super tasty snack, you first have to prepare the pesto. To do this, you have to puree the avocado, basil, walnuts, cheese and garlic with a hand blender or in the food processor to a homogeneous mass. Then you can season the mixture with salt and pepper and set aside.
Now mix the tomato halves, coriander leaves and olive oil in a small bowl and season with salt and pepper.
As a final step, coat each slice of bread with pesto and then top it with the tomato mixture. It’s best to serve the crositini straight away.
