As the name suggests, winter vegetables include vegetables that are mainly harvested in winter. It is also special that some of them can be consumed throughout the winter thanks to their storability. So you don’t have to do without the vitamins and nutrients that you so urgently need in winter.
Hearty winter vegetables in the form of warming stews, casseroles or as a side dish help through the cold season.
1. Kale – rich in vitamin C.
Kale is a typical winter vegetable and is not only rich in vitamin C, but also contains a considerable amount of potassium, calcium, magnesium and iron. So it’s a real superfood. Smoothies with kale are a real trend and an absolute vitamin C bomb. Not only can you enjoy it in a classic stew, it is also great in salad, as a pesto or, which tastes particularly good, as a vegetable chip.
2. Lamb’s lettuce – low-calorie source of vitamins
These winter vegetables are one of the most popular types of salad. Its mild, nutty taste goes well with fresh pears and apples, but also with a hearty pork belly or simply as a side dish. Lamb’s lettuce hits your calorie account with just 14 kcal per 100g and provides valuable nutrients such as iron, folic acid and vitamin C.
3. Brussels sprouts – all-rounder for beautiful skin and good defenses
Brussels sprouts need a little frost in order to develop their full and slightly tart taste. However, the high content of vitamin C can decrease due to the freezing temperatures. A portion of Brussels sprouts, i.e. approx. 200g, already covers the daily requirement of vitamin C. However, unlike other vegetables, the vitamin is only released when heated, but too long cooking time destroys it. These winter vegetables not only strengthen the immune system, but also help against stress, and their vital substances ensure beautiful skin and dehydrate.
4. Beetroot – immune pushers
The red tuber is a real pusher for your immune system. They are bright red, healthy and tasty. The domestic beet is convincing due to its simplicity in preparation and the many possible uses in the kitchen. Whether in a salad, with fish and meat, as a soup or a sweet dessert – beetroot are a real all-rounder. It is rich in valuable vitamins and nutrients and when properly prepared it tastes wonderfully fresh and aromatic.
5. Leek – provides many minerals
Leek ends up on the plate particularly often in the winter months, as even frosty temperatures cannot harm it. The all-rounder in the kitchen can end up in the soup pot with carrots, celery and other vegetables, enjoyed raw in a salad or used as an accompaniment to pasta or potatoes. Leek contains few calories, but plenty of vitamins A, B, C and E. It also provides the minerals potassium, calcium, phosphorus, sodium and iron.
